Cauliflower Recipe

My mother-in-law had us over for dinner last night and made a crackin’ good meal.  The cauliflower was incredibly good.  So you have your basic cauliflower and it needs something. I mean, really, does anyone eat it plain?  I used to make a white sauce and add lots of cheddar cheese and pour that over cooked cauliflower.  The recipe below is infinitely better – lighter and brighter.  It looks elegant, and no one needs to know that it has something so low brow as potato chips in it.  I’ve made it before with Ritz crackers but the chips are truly an improvement over Ritz crackers.

Cooked cauliflower (in the microwave is easy)
I Tablespoon butter
crushed chips (potato, corn or Doritos)

Wow, it’s good!  My MIL used regular Doritos and it gave a pretty burnt orange color.  So good.  Try it!  The next time I make it, I’ll take a picture and post it. Enjoy!

  1. Sorry to bore you…but I like it plain.  Simply steamed.   I remember being so disgusted with Dan that he put salt on things like cauliflower, broccoli and other vegetables.  Unfortunately, I sometimes put salt on mine now.

  2. I like to sprinkle a bit of grated yellow cheese on it, to make it look pretty, and only a bit because I’m stingy.  Lerrina makes it mashed and it is REALLY good too.  
    Are Collin’s xanga’s dates correct? Is that an old post or a new name? (brother bugger one)

  3. Hmm, I like mine plain, too, and serve it that way to the family.  However, Iong ago my mother used to serve is with a mixture of butter/breadcrumbs, patted on top and broiled.  Perhaps like what your mil did with the doritos.  BTW  I love Doritos.

  4. Sharon: that’s why I’m struggling to lose weight and you are not. I can eat raw caulifower plain, but cooked? It kind of weirds me out. Without salt? *That* would take a mighty dose of grace to get down!! But it would be good for me wouldn’t it?Bonnie: We make a lot of faux mashed potatoes with cauliflower. Maybe that’s why I went so gagga over this dish. Collin uses oneboyathome now as his xanga site. I’m not sure why he switched. But the dates for brotherbugger are right. Do you read Spurgeon’s devotionals? Today’s is about April coming from the Latin aperire and uses Hosea 10:12 “It is time to seek the Lord.” He urges us to open our hearts in a season when the buds are opening.Dana: Oh, I’m excited! A new visitor!! And *you* eat califlower plain too!! Your home looks so gracious and inviting. I loved the cloth napkin and placemat in your picture of the beef burgundy. Your mother’s method sounds close to this.
